White Chocolate Orange Ice cream
Ingredients
For the orange compote
- 1/3 cup Orange juice
- 2 tbsp Orange peel finely cut (after removing the pith)
- 2 1/2 tbsp Sugar
For the custard
- 3/4 cup Full fat milk
- 3/4 cup Heavy cream
- 3/4 cup Granulated sugar
- 1/8 tsp Salt
- 1 1/2 tbsp Cornflour
- 100 g Lindt Swiss White chocolate
Cream for whipping
- 3/4 cup Heavy cream
Directions
For the orange compote
Wash the orange well. Using a sharp knife, remove the pith completely. Chop it finely.
Keep the orange juice ready.
In a thick bottom saucepan,boil sugar, orange juice and orange peel for 10 mins on very low flame.Keep stirring.Let it thicken. Turn off the heat and allow it to cool well. Keep it aside.
For the custard
In a heavy bottom saucepan, boil milk, fresh cream, sugar, salt. Place it low flame. Mix cornflour in 1 tbsp of milk /water and add this to the mixture.
Keep stirring.

Now add the white chocolate .
Keep a bowl of ice cold water ready.
Turn off the heat.
Place the sauce pan into the bowl of cold water. Let it cool.
Cover it with cling film and refrigerate it for 30 minutes.
Now mix the orange compote and custard gently.
Beat 3/4 cup of heavy cream until thick using a electric hand mixer. I used 38 % fat content heavy cream. Any dairy based whipping cream can be used.
Beat the custard and whipping cream together.
Transfer it to a glass or airtight plastic container. Freeze it overnight.
