Walnut Banana Raisin Rusks
Ingredients
- 2 cups All purpose flour/ Maida
- 1 tsp Instant dry yeast
- 2 tbsp Maple syrup
- 1 tbsp Brown sugar
- 2 tsp Salt
- 1 count Egg
- 1 tbsp Refined oil
- 1/2 cup Water
- 1/3 cup Lightly toasted walnuts (chopped)
- 1/4 cup Raisins
- 1/4 cup Mashed bananas
- 1 tbsp Rosemary leaves
Directions
Keep the stand mixer bowl ready.
Add all the ingredients except oil.
Knead for 10 minutes . Add 1-2 tbsp of water if the dough is too stiff.
Add oil. Knead for another 4-5 minutes.
Shape the dough into a ball. Let it rise. Cover the bowl with a wet towel. Allow the dough to be double in volume.
Now, keep two loaf tins ready. Grease and dust the tins.
Punch down the dough gently. Knead for 3-4 minutes.
Divide the dough into two portions.
Shape them into a loaf and let it double in volume.
Pre heat the oven at 180 degrees C.
Place the tjns into the oven. Bake for 30 minutes @180 degrees C.
Take the bread out . Let the loaf cool well.
Slice the bread with a sharp serrated knife.
Apply butter on the slices. Maple syrup can be added to the butter.
Bake again for 25-30 minutes at 140 degrees C. Turn on the fan mode. Remove from the oven.
