Victoria Sponge Cupcakes

Ingredients

  • 115 g Self raising flour
  • 115 g Salted butter
  • 115 g Castor Sugar
  • 2 count Egg
  • 3 tbsp Water
  • 1 tsp Vanilla essence

Directions

Pre heat the oven at 150 degrees C. Sift the flour thrice. Keep the cupcakes mounds ready.

In a bowl, beat butter and sugar well using a hand mixer.

Now add gently beaten eggs.

Beat well .Don’t worry if the mixture curdles.

Now add the essence.

Gently fold in the flour and water using a spatula.

Follow cut and fold method while mixing the batter. Do not stir the batter.

Transfer the batter into prepared cupcake tins.

Bake at 150 degrees C for 18-20 minutes or until done.
