Vegetable Cheddar Crackers

Ingredients
- 2 cup All purpose flour/Maida
- 1 tsp Baking powder
- 2 tbsp Water
- 1/2 cup Carrot grated
- 1/4 cup Tomato chopped
- 1 tbsp Oil
- 1 tbsp Ground black pepper
- 1/2 cup Cheddar cheese
- Oil- 1/4 cup+1 tbsp
- 1 tsp Oregano
- 1 tsp Salt
Directions

Mix grated carrots , chopped tomatoes, pepper powder and 1 tbsp of oil together.

Pack these ingredients in aluminium foil. Seal the edges tightly.

Pre heat the oven at 200 degrees C.

Bake the sealed ingredients for 30 minutes.

Remove it from the oven and let it cool.

In a bowl, mix all the dry ingredients and oil.

Add the roasted vegetables.

Mix well. Add water, oregano and grated cheese.

Pulse it in a food processor for a minute.

Knead it gently without applying much pressure.

Divide the dough into two parts.

Cling wrap and refrigerate for 30 minutes.

Place the dough between two layers of cling film.

Using a rolling pin, gently roll it.

Refrigerate it for 20 minutes.

Pre heat the oven at 140 degrees C.

Place it in the oven and bake for 18-20 minutes.
