Tomato Mushroom Chicken Soup

Ingredients

  • 4 count Tomato
  • 1 count Onion
  • 5-6 count Garlic
  • 1” count Ginger
  • 1 tbsp Freshly ground black pepper
  • 3 cups Chicken stock
  • 1/2 cup Chicken shredded
  • 1 cup Mushroom chopped
  • 3-4 count Fresh Basil leaves
  • 1/4 cup Olive oil
  • Salt to taste

Line rectangular baking tin with parchment sheet. Slice the tomatoes, Onion, garlic and ginger finely. Drizzle 2 tbsp oil on top. Add 1/2 tsp salt and pepper. Pre heat the oven at 140 degrees C. Turn on the grill mode. Place the tin in the oven.Roast them until the tomatoes are soft.

Turn of the oven. Let the tomatoes cool well.

Heat a heavy bottom pan saucepan. Add 2 tbsp oil. Add shredded chicken and chopped mushrooms. Sauté for a minute on low flame.

Add the chicken broth and Basil leaves. Let it boil.

Blend the roasted tomatoes and rest of the ingredients well. Pass the liquid through a metal strainer. Add this to the chicken broth.

Continue to boil . Add salt . Let it simmer for 5 minutes on low flame. Turn off the heat. Serve hot.
