Tea cake
This is a very moist and soft tea cake or butter cake . I love candied fruits . I have added candied Raw mango , candied Papaya and candied kiwi fruit. Lemon juice gives a beautiful , refreshing citrus flavour . Cream cheese gives a perfect texture.
Ingredients
- 115 g Flour
- g Baking powder
- 100 g Salted butter
- 25 g Cream cheese
- 115 g Powdered sugar
- 3 count Egg
- cup Water
- 1 tsp Lemon juice
- cup Candied fruits chopped
Directions
Prepare a 7 1/2" cake tin. Pre heat the oven at 170 degree C . Separate the egg whites and yolk . Beat egg whites until stiff and keep aside . Sift flour and baking powder thrice . Cream butter and sugar until light and fluffy . Add lightly beaten egg yolks . Add cream cheese . Using a spatula , gently fold in flour ,water and lemon juice starting and ending with flour. Gently fold in candied fruits . Fold in beaten egg whites . Transfer the batter to the prepared cake tin . Bake at 170 degree C for 35 - 40 minutes or until done .
