Spinach bread mildly spiced with red chilli flakes and topped with roasted sesame seeds..
This bread is soft and mildly spicy . Green chilli paste can be added instead of red chilli flakes .
Ingredients
- 2 1/2 cups All purpose flour /Maida
- 1 1/8 tsp Instant dry yeast
- 1 tbsp Sugar
- 1/2 tsp Salt
- 3/4 cup Warm water
- 1 tbsp Oil
- 1 tbsp Fresh cream
- 1 tsp Red chilli flakes
- 1 tsp Black sesame seeds
- 1 tsp White sesame seeds
- 100 g Spinach leaves
Directions
Wash and clean the leaves .
Blanch it .
Make a thick puree without adding water .
In a bowl ,mix flour. sugar , instant dry yeast, fresh cream and salt .
Mix it well .
Add spinach puree and red chilli flakes .
Mix it well .
Add warm water .
Knead well for 5-6 minutes .
Add oil and knead for another 3-4 minutes .
Shape it into a ball and transfer it into a well oiled bowl .
Cover it with cling film .
Let it double in size . Meanwhile roast the sesame seeds lightly . Keep it aside .Let it cool .
Now punch down the dough gently .
Knead gently for a minute or two .
Roll it into rectangle .
Roll it tightly .
Shape it into a log .
Transfer it into a loaf tin . I used 8" x 3.5" loaf tin . Apply water using a brush and sprinkle sesame seeds .
Wait for the second rise . Meanwhile pre heat the oven at 180 degree C with top and the bottom rods on . Cover the loaf with an aluminum foil and bake for 25 -30 mins. Now take the loaf tin out and remove the aluminum foil . Butter/egg/milk wash using a brush . Place it back in the oven and bake for another 5-7 minutes until the top is brown .
Transfer it to a wire rack and apply butter with a brush . Allow it to cool well at least for 3-4 hrs before slicing .
