Spicy rolls..
Ingredients
For the dough
- 500 g All purpose flour/ Maida
- 3 tbsp Oil
- Warm water
For the filling
- 250 g Minced chicken/mutton
- 1 cup Large Onion ( finely cut)
- 1/4 cup Curd
- 1/2 tsp Sugar
- 1/4 cup Chopped tomatoes
- Coriander leaves (a bunch)
- 4 tbsp Oil
- Sliced onion
- 2 tsp Lemon juice
- Oil for frying
Masala to be ground
- 3 tbsp Red chillies finely chopped
- 3/4 tsp Cumin
- Cinnamon 1" piece
- 2 count Cloves
- 3 tbsp Garlic paste
- 2 tsp Black pepper
- 1/4 cup Freshly grated coconut
Directions
Mix the flour in warm water with oil .Knead well and keep aside for an hour.
Meanwhile prepare the masala.
Grind all the ingredients including coconut into a fine paste.
Keep the minced meat ready.
In a frying pan, add oil. Now add finely cut onion and sugar.
When it starts to brown,add the ground ingredients and fry well for a few minutes.
Now add chopped tomatoes. Fry well.
Now add minced chicken/ mutton.
Add salt and cook well until the meat is tender.
Keep stirring.Remove from heat . Do not add extra water. This should be dry.
Keep it aside.
Keep cherry tomatoes, onion slices , coriander leaves, lemon juice and finely chopped red chillies ready for the filling.
Take three small balls each weighing around 40 gms.
Roll each one of them into very thin circles .
Make a paste with All purpose flour and oil.
Apply it on one of the layer.
Then place the second circle on it.
Apply the maida / oil mixture on it .
Now place the third circle.
Divide it into four triangles.
Take two triangles and flatten it a bit with a rolling pin.
Place the cooked chicken/ mutton masala , cherry tomatoes, onion slices , finely chopped red chillies and a bit of lemon juice.
Make a thick paste of Maida and water to seal the edges.
Now place the other triangle on top of it and seal the edges.
In a frying pan , pour enough oil for deep frying.
When the oil is hot , deep fry it without turning it much . Fry until it is crispy and golden brown in colour. Drain the oil and serve hot.
Repeat the process or refrigerate the dough and the filling separately. Do not freeze the dough.
