Spicy Khara buns..
Ingredients
For the dough
- 5 cup All purpose flour/Maida
- 2 tbsp Sugar
- 2 tsp Salt
- 2 tsp Instant dry yeast
- 2 tbsp Thick curd
- 2 count Egg (optional)
- 2 tbsp Oil
- Warm water 1 cup+ 3/4 cup
For the masala
- 1 count Onion (small)
- 20-12 count Curry leaves
- 2 tsp Garlic paste
- 1 tsp Ginger paste
- 1/2 tsp Jeera powder
- 2 tsp Chaat masala
- 2 tbsp Oil
- 1 tbsp Red chilli flakes
Directions
Masala
Coarsely grind all the ingredients together except chilli flakes.
Heat a small saucepan on low heat.
Add oil. Add all the ground ingredients and fry on low flame for 2-3 minutes.Turn off the heat and add the chilli flakes.
In a bowl mix flour, yeast , sugar,salt and the ground ingredients.
Add eggs and curd.
Instead of eggs you can add 4 tbsp of thick fresh cream.
Add warm water. Knead for 6-7 minutes. The dough will be sticky. Do not add extra flour.
Add oil. Knead for another 3-4 minutes.
Shape it into a ball and transfer it to a well oiled bowl.Cover it with cling film. Let it rise.
Let the dough double in volume.Now punch down the dough gently and knead for a minute or two.
Divide the dough into 35 equal ball . Cover the dough with cling film .
Keep it for the second proofing.
Meanwhile pre heat the oven at 180 degrees C with top and bottom rods rods on.
Apply water with a brush and sprinkle chia seeds/ poppy seeds.
Make a tent with aluminium foil and bake for 15-20 minutes.
Now take the tin out .Discard the aluminium foil and apply salted butter or beaten egg.
Keep the bun back in the oven and and bake for 5-6 minutes or until golden brown crust is formed. Take the buns out and apply butter liberally.
