Spicy date cake flavoured with orange juice
Ingredients
- 150 g All purpose flour/Maida
- 1 tsp Baking soda
- 100 g Brown sugar
- 40 g Granulated sugar
- 75 g Salted butter
- 1 count Egg
- 100 g Seedless dates
- 150 ml Water
- 1 tsp Orange zest
- 1 tbsp Orange juice
- 1/4 cup Roasted walnuts
- 1 tsp Cinnamon powder
- 1/4 tsp Nutmeg powder
Directions
Wash and clean the dates and cut it into small pieces. In a saucepan boil 150 ml of water. Turn off the heat. Transfer the chopped dates into a small bowl and pour the hot water into the bowl .Stir it with a spoon and keep it covered with a tight lid. Let the dates soften. Keep it aside.Let it cool well.
Meanwhile grease and dust a 8" round cake tin. Sift flour , cinnamon powder, nutmeg powder and baking soda thrice and keep it aside. Keep orange zest and juice ready. Roast the walnuts for 3-4 mins .Chop it into small pieces and keep it aside.
Using an electric mixer, cream the butter and sugar well. Add orange zest.
Now add slightly beaten egg.
Now , using a spatula gently fold in sifted flour mixture , orange juice and dates along with the liquid.
Fold in roasted walnuts.
Transfer the batter into the prepared cake tin and bake for 40 mins at 150 degreeC or until done.
