Spicy Curry leaf bread

Ingredients

For the dough

  • 2 1/2 cups All purpose flour/ Maida
  • 1 count Egg
  • 1 tsp Instant dry yeast
  • 2 tbsp Sugar
  • 1 tsp Salt
  • 3/4 cup Water
  • 1 tbsp Oil

For the flavour

  • 1 tbsp Curry leaves paste
  • 1 tbsp Coriander leaves paste
  • 1 tsp Ginger paste
  • 2 tsp Garlic paste
  • 1/4 tsp Salt
  • 2 tsp Lemon zest
  • 2 tsp Red chilli flakes
  • 2 tbsp Refined oil

Directions

For the dough

In a bowl, mix all the ingredients together except oil.

Knead the dough for 6 minutes until the dough is smooth , elastic and shiny.

Now add 1tbsp oil. Knead again for 4-5 minutes.

Shape the dough into a ball and place it into a well oiled bowl. Cover the bowl with cling film. Let the dough double in volume.

Meanwhile let us prepare the masala/ flavouring.

In a small glass bowl, mix all the ingredients together. Microwave it for a minute or two. Keep it aside.

Now, check the dough. The dough should double in volume. Punch the dough gently. Knead for a minute or two. Now add the prepared masala. Knead for 2-3 minutes.

This is the basic recipe for curry leaf bread. You can shape it into a loaf/ bun / pull apart bread.

Prepare a loaf tin. I’m using 8”x 4”x 4” .Shape the dough into a loaf. Place the dough into the prepared bread tin. Cover the tin with cling film.Let it proof. The dough should reach till 1” below the rim of the tin.

Make a tent with aluminium foil and cover the tin.

Pre heat the oven at 180 degrees C.

Place the tin in the oven. Bake for 25 minutes.

Now take the tin out of the oven. Discard the aluminium foil. Egg wash the bread well .

Place the tin back into the oven. Bake for 5-6 minutes until the crust is golden brown.

Take the bread out of the tin. Apply butter liberally. Allow the bread to cool well before slicing.
