Spicy Chicken Muffins

Ingredients

  • 2 cup Self raising flour
  • 1/2 tsp Baking soda
  • 1 count Egg
  • 3 tbsp Thick Curd
  • 1/3 cup Refined oil
  • 1/3 cup Chicken stock
  • 3 tbsp Chopped green chillies
  • 4 tbsp Chopped onion
  • 1 tsp Ginger paste
  • 2 tbsp Garlic paste
  • 1 tbsp Paprika chopped
  • 4 tbsp Coriander leaves chopped
  • 1 tbsp Lemon zest
  • 3/4 cup Shredded chicken (cooked)
  • Salt

Directions

Pre heat the oven at 150 degrees C.

Sift all the dry ingredients.

In a bowl, beat egg and lemon zest for 2-3 minutes.

Add the rest of the ingredients except the dry ingredients.

Now add the the rest of the ingredients.

Gently mix using a spatula.

Add more chicken stock/ water if the batter is too thick.

Cover the bowl with cling film and let the batter rest for 10 minutes.

Meanwhile keep the muffin pans ready. Grease and dust the pans .

Transfer the batter into the greased muffin pans and bake for 20-25 minutes or until done.
