Spicy bread flavoured with fried onion,green chillies and carrots
Ingredients
For the tangzhong
- 2 tbsp All purpose flour/ maida
- 130 ml Water
For the dough
- 2 1/2 cup All purpose flour
- 1 1/8 tsp Instant dry yeast
- 3/4 tbsp Sugar
- 3/4 tsp Salt
- 1 tbsp Milk powder
- 3 tsp Fresh cream
- 1 tbsp Oil
- 3/4 cup Milk
For the flavoured oil
- 3 count Green chilli
- 4 tbsp Oil
- 3 tbsp Finely chopped carrot
- 1 count Onion ( sliced )
- 1/2 tsp Salt
Directions
For the tangzhong
In a saucepan, mix flour and waterwithout any lumps. Cook it on low flame ,stir it continuously.Let it thicken. Turn off the heat and allow it to cool.Keep it aside.
For the dough
In a saucepan bowl ,mix flour, yeast ,sugar, salt , fresh cream and milk powder.
Mix the tangzhong and milk . Add this to the flour mixture.
Knead well..
Knead well for 6 -7 minutes .
Add 1 tbsp oil .
Knead for another 3-4 minutes.
Shape it into a ball , apply oil and place it well oiled bowl. Cover it with cling film and let it rise.
For the masala ..
Heat oil in a pan . Add chopped green chilies , fry well .Now add sliced onion and salt . Fry until brown in colour. Now add finely chopped carrots. Turn off the heat.
Let the dough double in volume.

Now gently punch it. Knead for a minute or two.
Now mix the prepared vegetables.

Shape it into a log .
Place it in a well oiled 8"x4"x4"loaf tin.
Cover it with cling cling film . Meanwhile pre heat the oven for 180 degree c with both the top and bottom rods on.
Let it rise till 1" below the rim of the loaf tin. Cover it with aluminium foil . Bake for 25 minutes.Take the loaf tin out and apply salted butter.Place it back in the oven (without the aluminium foil )and let it bake until a evenly brown crust is formed and it should sound hollow when tapped.
Allow the bread to cool well atleast for 3 -4 hours before slicing..
