Soft buns flavoured with roasted pumpkin and topped with basil seeds..
Ingredients
- 4 tbsp Pumpkin puree
- 2 1/2 cups Flour
- 1 1/8 tsp Instant dry yeast
- 1 tbsp Sugar
- 3/4 tsp Salt
- 1 tbsp Oil
- 1 tbsp Basil seeds
- Water 1/2 cup + 1 tbsp

For the dough..
In a bowl mix together ,flour ,yeast ,sugar ,salt , and pumpkin purée.
Mix well and add water .
Knead it well for 5-6 minutes and add oil.
Knead well for 3-4 minutes until the dough is smooth and elastic.
Shape it into a ball and apply oil .Place it in a well oiled bowl and cover it with cling film .Wait for the first rise .
Once the dough is doubled , gently punch down the dough and knead very gently for a minute or two .
Divide the dough into nine equal parts .
Each portion weigh around 47 - 50 gms.
Shape them into small balls and sprinkle the basil seeds. Wait for the second rise .
I used a 9 " square tin .
Let it rise . Meanwhile pre heat the oven at 180 degree C with both top and bottom rods on .
Cover the loaf tin with aluminum foil and bake for 12 -13 mins .
Now take the tin out and remove the aluminum foil and egg wash / milk wash / apply butter .
Place the tin back in the oven without the aluminum foil and bake for 3-4 minutes until the top is evenly brown .
Remove the buns from the tin and apply butter .
If you want it sweeter ,add 1/4 cup of chocolate chips after the first rise .
If savoury buns are preferred , 1 tsp ginger paste and 1 tsp green chilli paste can be added .
If you like it plain ,hazelnut chocolate spread goes well with these golden buns .
