Savoury Muffin loaf..

Ingredients

  • 1 1/2 cup Self raising flour
  • 2 count Egg
  • 1/2 cup Milk
  • 1/4 cup Oil
  • 1/4 cup Sweet potato (cooked and cut into samll pieces)
  • 1/4 cup Carrot (grated)
  • 1/4 cup Onion ( cut into small pieces)
  • 1/4 cup Green peas
  • 3 tbsp Red chillies (finely chopped)
  • 3 tbsp Yogurt
  • 1 tbsp Garlic finely chopped
  • 2 tbsp Oil
  • Salt

Directions

Heat a saucepan,add 2 tbsp of oil. Fry onion and garlic lightly. Add chopped red chillies and green peas.Cook it for 2-3 minutes.Keep stirring.Add salt .Turn off the heat. Keep it aside.

Pre heat the oven at 150 degrees C with top and bottom rods on.

Line a loaf tin with parchment sheet.

Sift the self raising flour thrice.

Keep all the vegetables ready.

In a bowl mix egg , milk and oil.

Beat it gently using a electric mixer.

Now using a spatula, gently mix the wet and the dry ingredients. Add yogurt.

Do not stir.Use cut and fold method.

Now add the prepared vegetables ,grated carrots and sweet potatoes.

Transfer it to the prepared tin.

Bake of 40-50 mins or until done.

Take the loaf out and spread chopped cheddar cheese and mint leaves. Bake it for 2-3 minutes.

Remove from the oven and allow it to cool very well before slicing.
