Rustic Quiche..
Ingredients
For the crust
- 140 g All purpose flour/Maida
- 70 g Cold butter
- 1 count Egg
- 2 tbsp Cold water
- 3/4 tsp Salt
- 3/4 tsp Sugar
For the filling
- 1 cup Chicken mince
- 1/4 cup Onion chopped
- 1 tsp Garlic chopped
- 1/2 cup Fresh green peas
- 1 cup Spinach chopped
- 1 tsp Green chili paste
- 1 tsp Lemon juice
- 3/4 tbsp Pepper powder
- 3 tbsp Fresh cream
- 2 count Egg
- 2 tbsp Water
- 3 tbsp Butter
- Salt
- 3 tbsp Bread crumbs
For the topping
- Cheddar cheese grated
Directions
For the crust
Mix flour , cold butter,salt and sugar.
Add one lightly beaten egg.
Gently knead the dough for a minute or two without applying pressure.
Add a tbsp of cold water if the dough is too stiff.
Cling wrap and refrigerate for one hour.
For the filling
Cook green peas and keep it aside.
Heat a heavy bottom pan.
Add butter.Add chopped onion and garlic. Add green chili paste. Keep the flame low.
Add the chicken mince .
In a small mixie jar, coarsely grind the cooked green peas and spinach leaves.
Add this to the minced chicken .
Add water and cook for 3-4 minutes.
Now add fresh cream and black pepper powder.
Turn off the heat and add lemon juice.
Keep it aside.
Take the dough from the refrigerator.Place the dough between two cling film..Roll it thin using a rolling pin.



Carefully cover it with cling film and refrigerate for 30 minutes.
Meanwhile pre heat the oven at 150 degree C.
Bake the crust base for 15 minutes until crisp and lightly golden in colour.
Remove it from the oven.
Add 3 tbsp bread crumbs to the filling mixture.
Spoon in the mixture into the baked crust.Add 2 gently beaten eggs.
Bake for 30-35 minutes at 150 degree C for 30 minutes or until firm.
Now sprinkle the grated cheddar cheese on top and bake for another 4-5 minutes.
