Rustic pizza
Ingredients
- 1 cup All purpose flour
- 1 cup Wheat flour
- 3/4 tsp Instant dry yeast
- 3/4 tsp Salt
- 1/2 tbsp Honey
- 1 3/4 cup Cold water
For the pizza sauce
- 1 count Tomato
- 1 count Onion
- 1 tsp Garlic paste
- 3/4 tsp Italian spices
- 1/2 tsp Red chilli powder
- 1/2 tsp Sugar
- Salt
- 1 tbsp Tomato ketchup
Other topping
- 3/4 cup Spinach chopped
- 1/2 cup Mushroom cut into small pieces
- 1 tbsp Cream cheese
- 1/4 cup Cherry tomatoes
- Mozzarella cheese
- Cheddar cheese
- 2 tbsp Olive oil
Directions
For the dough
In a bowl, mix all purpose flour, wheat flour, honey , instant dry yeast and salt.
Add water.Mix it gently with a spatula.
The dough should be sticky.
Cover it with cling a film and let it proof for 7-8 hrs.
Keep the dough in a cool place or refrigerate it overnight.
Now prepare the pizza sauce. Blanch the tomato. Make a smooth paste.Grind the onion into a paste. In a pan , heat oil.Add onion paste.then add tomato purée and tomato ketchup.Add the flavourings and rest of the ingredients. Add cream cheese.Let it thicken.Turn off the heat.
Meanwhile pre heat the oven at 180 degrees C with top and bottom rods on.
Let it proof well.
Now punch down the dough.
Divide it into two portion.
Roll out the dough nice and thin.
Line a baking tin with parchment sheet.
Prick the dough with a fork or make dent with finger tip..
Gently apply olive oil on the dough.
Bake fo 8-10 minutes.
Take the tin out .
Add the toppings.
Add more cheese if required.
Bake for another 10 minutes.
