Ingredients

  • 1 cup All purpose flour
  • 1 cup Powdered sugar
  • 3 count Egg
  • 10 tbsp Hot milk
  • 2 tbsp Orange juice
  • 1 tbsp Orange zest
  • 3 tbsp Dry Pomelo
  • 2 tsp Baking powder

Pre heat the oven at 160°c . Prepare a cake tin . I used 11" × 7 1/2" rectangle cake tin . Cut the pomelo into small pieces . Separate the egg whites and yolks . Sift flour and baking powder thrice and keep aside . In a medium sized bowl beat egg whites along with 3/4 cup of powdered sugar until stiff . Keep it aside . In another bowl beat egg yolks with 1/4 cup sugar until it is pale yellow and almost stiff. Beat together beaten egg yolks and white together . Add orange juice and zest . Mix well. Add the flour mixture along with hot milk ,starting and ending with flour. Continue beating in moderate speed . Fold in chopped pomelo . Transfer the batter into the prepared baking tin . Bake at 160°c for 18 -20 minutes or until done .
