Ingredients
For the dough
- 1 1/4 cup Wheat flour
- 3/4 cup All purpose flour/ Maida
- 1 tsp Instant dry yeast
- 1 tsp Brown sugar
- 2 tbsp Olive oil
- 1 tsp Salt
- 3/4 cup Water
For the topping
- 2 count Tomato (medium sized)
- 8- 10 count Mushroom
- 5-6 count Red chillies
- 1 tbsp Garlic chopped
- 1/2 tsp Sugar
- 1 tsp Chilli powder
- 2-3 tbsp Water
- Thyme
- Oregano
- 3 tbsp Oil
- 1/4 cup Spring onion chopped
- 1/3 cup Shredded cheese
- Fresh basil ( optional)
- Onion sliced ( medium sized) -1
- Salt
Directions
For the dough
Mix the flour , instant dry yeast,salt and sugar well. Add water.Knead it for 6-7 minutes.Dough should not be stiff .Add 1-2 tbsp of water if required.
Shape it into a ball and place it in a well oiled bowl.Apply oil on the dough.Cover it with cling film and let it rise.
Let it puff up and double in volume.
Knock down the air and cling wrap it. Refrigerate it for an hour.
Blanch the tomatoes and purée it.
Meanwhile prepare the topping.In a saucepan, fry the sliced onion in oil until soft. Add sliced mushrooms.Add salt and red chillies..Remove from heat .Transfer it to a bowl . In another pan ,add oil . Now add the puréed tomatoes, chilli powder, sugar , salt and seasonings.Add water .Let it thicken .Turn off the heat. Keep it aside.
Take a portion of the dough and roll it into a circle. Create a dam around the sides. Apply 1 tsp olive oil using a brush.
Prick it with fork. Pre heat the oven at 180 degrees C and bake it for 5-6 mins.
Now take it out .Add the toppings.Soread the tomatopurée first .Then mushroom and onion Finally shredded cheese.Drizzle 2 tbsp of olive oil .
Place it in the oven and bake for 8-9 minutes . Remove from the oven and sprinkle chopped spring onion and fresh basil.Serve hot.
