Pizza
Ingredients
For the dough
- 1 cup All purpose flour/Maida
- 1 cup Wheat flour
- 1/4 cup Semolina
- 3/4 tsp Instant dry yeast
- 1 tbsp Honey
- 3/4 tsp Salt
- 1 count Egg
- 3 tbsp of curd can be added instead of egg
- 3 tbsp Avocado
- 3/4 cup Water
For the garlic oil
- 3 tbsp Olive oil
- 1 tsp Garlic paste
For the pizza sauce
- 2 count Tomato small size (blanched)
- 1/4 cup Onion paste
- 1 tsp Garlic paste
- 2 tbsp Tomato paste
- 1 tsp Sugar
- 1 tsp Chilli powder
- 1 tsp Pepper powder
- 1/2 tsp Italian spices
- 1 cup Boneless chicken/ paneer
- 1/4 cup Water
- 2 tbsp Oil
- Salt to taste
For the topping
- Mozzarella cheese
- Cheddar cheese
- 1/4 cup Sliced onion
- 2 tbsp Chopped Baby leeks
Directions
For the garlic oil
In a bowl , heat garlic paste and olive oil for a minute in microwave. Keep it aside.
In s bowl, mix all purpose flour, wheat flour, semolina, honey, instant dry yeast, salt together.
Add ripe avocado.
Mix well.
Add egg or 3 tbsp thick curd.
Add water. Knead well for 6 mins. If the dough is stiff add 1-2 tbsp extra water. Add 1 tbsp of garlic oil.
Shape the dough into a ball. Apply oil on the dough. Place it in a well oiled bowl.
Cover it with cling film. Let it double in volume.
Meanwhile prepare the sauce. Purée the blanched tomatoes.
Heat a heavy bottom saucepan. Add oil. Add onion paste. Fry on low flame. Add garlic paste, sugar, tomato purée, chill powder, pepper and salt. Now add the chicken pieces, tomato paste and water.Let it thicken. Add Italian spices. Turn off the heat.Keep it aside.
The dough should double in volume.
Punch the dough gently.
Knead the dough for a minute or two.
Take around 90 gms of dough and roll it into a circle.
Grease the pan before you place the dough. Prick the dough with a fork. Make a dam on its sides.
Let it proof for 10 mins.
Meanwhile pre heat the oven at 180 degree C with top and bottom rods on.
Place the pan in the oven with top and bottom rods on.
Bake it for 10-12 minutes.
Now carefully take the pan out and add the topping.
First the pizza sauce. Add rest of the topping. Drizzle the remaining garlic oil on top. Sprinkle cheddar cheese and bake for 12-15 minutes.
Take the pan out and add mozzarella cheese and chopped baby leeks.
Bake for a minute or two or until the cheese is melted.
