Pistachio Pineapple Tea Cake

Ingredients
- 110 g All purpose flour/ Maida
- 1/2 tsp Baking powder
- 1/4 tsp Baking soda
- 90 g Salted Butter
- 110 g Granulated sugar
- 1 count Egg
- 40 g Pistachio ( powdered)
- 6 tbsp Water
- 1/3 cup Pineapple chopped
- 1 tbsp Water
- 1 tbsp Sugar
- Yellow food colour (optional)
Directions

Grease and dust a 6” aluminium pan. Sift flour, baking powder and baking soda thrice. Pre heat the oven at 150 degrees C.

In a heavy bottom saucepan, cook 1/3 cup of chopped pineapple, 1tbsp of water and 1 tbsp of sugar on low flame for 2 minutes. Turn off the heat.Keep it aside. Let it cool.

Cream butter and sugar well.

Add gently beaten egg.Cream well.

Fold in the sifted ingredients and water.

Do not stir the batter. Add a drop of yellow food colour. Mix very gently. Follow cut and fold method while mixing.

Now very gently fold in the ground pistachios and pineapple.

Transfer ithe batter into the prepared tin.

Bake for 30 minutes at 150 degrees C or until done.
