Pineapple Upside Down Cake

Ingredients

  • 125 g Maida/ All purpose flour
  • 25 g Vanilla custard powder
  • 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 125 g Granulated sugar
  • 1/3 cup Yogurt based Buttermilk
  • 2 tsp Vanilla essence
  • 1 count Egg
  • 8-9 count Pineapple slices
  • 9 count Marachino cherries
  • 1/3 cup Brown sugar

Directions

Pre heat the oven at 150 degrees C.

Sift the dry ingredients thrice.

Grease and dust a 8” aluminium pan. Line it with parchment sheet.

Apply butter on the parchment sheet. Next sprinkle 1/3 cup of brown sugar evenly . Place 8-9 slices of pineapple with cherries in the middle.

In a bowl, cream the butter and sugar until light. Add gently beaten egg.

Fold in the flour and buttermilk using a spatula. Adjust the quantity of the liquid if the batter is too thick. Add vanilla essence.

Transfer the batter to the prepared tin.

Bake at 150 degrees C for 40-50 minutes or until done.
