Pineapple cherry butter cake..
This colourful cake is moist and very soft . Cherries and pineapple pieces are added for flavour .
Ingredients
- 115 g All purpose flour
- 115 g Butter
- 110 g Powdered sugar
- 1/2 tsp Baking powder
- 1/4 cup Water
- 2 Egg
- 1/8 tsp Salt
- 2 tbsp Canned cherries chopped
- 2 tbsp Pine apple pieces
- 3 tsp Sugar
- 1/4 tsp Vanilla essence
Directions
Sift the flour, baking powder and salt thrice. Grease and dust a 7" round tin . Pre heat the oven at 160 degree C .Separate the egg whites and yolks .Using an electric mixer, beat egg whites till stiff. Keep it aside .
Cook the pineapple pieces and 11/2 tsp of sugar in low heat for a minute or two . Keep it aside . Let it cool .
Cook the cherries in 11/2 tsp of sugar in low flame for a minute . Turn off the heat and let it cool .
Beat butter well using an electric mixer . Add powdered sugar. Beat it well .
Beat the egg yolks lightly and add it to the above mixture .
Using a spatula , gently fold in flour and water , starting and ending with flour. Add vanilla essence.
Gently fold in pineapple and cherries . Fold in beaten egg whites .
Transfer the batter into the prepared cake tin and bake at 160 degrees C for 35 minutes or until done .
