Peanut Orange Ginger Cookies
Ingredients
- 2 cup All purpose flour/Maida
- 1 tsp Baking powder
- 1/2 cup Coarsely ground peanuts
- 1/2 cup Granulated sugar
- 3/4 cup Salted butter
- 1 tbsp Water
- 3 tbsp Orange peel (finely chopped after removing the pith)
- 1 tbsp Finely grated ginger
- 2 tbsp Sugar
- 4 tbsp Water
- Orange food colour- a drop or two
Directions
In a heavy bottom saucepan, cook orange peel, finely grated ginger, 2tbsp sugar and 4 tbsp water on low flame. Add a drop of orange food colour.
Cook for 3-4 minutes .
Keep It aside.Let it cool well.
Sift the dry ingredients thrice
Cream butter and sugar well using an electric mixer.
Add sifted flour and ground peanuts.
Knead gently without applying pressure.Add 1 tbsp of water if the dough is too stiff.
Now add the cooked ingredients.
Knead the dough gently for a minute.
Cover the dough with cling film and refrigerate for 30 minutes.
Line a rectangular baking tin with aluminium foil.
Now take 1 tbsp of dough. Shape it into a ball. Make a small design in the center using a fork.
Transfer the cookies into the prepared tin.
Refrigerate it for 20 minutes.
Meanwhile, pre heat the oven at 150 degrees C.
Bake the cookies for 20- 22 minutes.
Now, turn off the heat. Remove the cookies from the oven .
Let it cool.
