Passion fruit ice cream ..
This passion fruit icecream is smooth and silky .It is eggless and no condensed milk added .
Ingredients
For the custard
- 1 cup Milk
- 1/3 cup Granulated sugar
- 1 tbsp Custard powder
For passion fruit compote
- 3/4 cup Passion fruit pulp
- 25 g Sugar
Whipping cream
- 1/2 cup Whipping cream
Directions
For passion fruit compote
Scoop out the pulp and pass it through a sieve to remove seeds . In a sauce pan mix the pulp and sugar well and heat it. Bring it to boil and let it simmer until it is thick . Turn the heat off and let it cool well . Keep it aside .
Boil one cup (200ml) of milk in a saucepan. Keep stirring .
Let it simmer and reduce it to 3/4 cup .
Mix 1 tbsp of custard powder in 1 tbsp water.
Add the custard powder to the boiled milk and heat it for a minute or two .
Let it thicken .
Turn off the heat . Pass the custard through a fine strainer .Place the saucepan into a bowl of ice cold water.Let it cool .Cover it with cling film and refrigerate for 30 minutes.
Keep 2 tbsp of passion fruit compote ready .
Take 1/2 cup of whipping cream . Beat it until stiff.
Add the cooled custard . Continue beating .
Add passion fruit compote .

Transfer it to a glass / plastic container.Cling wrap it .
Freeze it for atleast 6 hrs or overnight .
