Muffin Loaf

Ingredients

  • 2 cups Self raising flour
  • 1/2 cup Semolina
  • 1 tsp Baking soda
  • 3 count Eggs
  • 1/4 cup Thick curd
  • 1/4 cup Chicken stock
  • 1/3 cup Refine oil
  • 2 tsp Salt
  • 1/4 cup Chicken salami
  • 1/4 cup Shredded chicken
  • 1/2 cup Chicken sausage
  • 1/4 cup Onion chopped fine
  • 3 tbsp Green chilli chopped
  • 1 tbsp Ginger chopped
  • 2 tbsp Garlic chopped
  • 1/4 cup Green peas
  • 1/4 cup Basil leaves chopped
  • 1/4 cups Spring onion leaves
  • 1 tbsp Pepper powder
  • 3 tbsp Oil
  • Salt to taste

Directions

Heat a heavy bottom saucepan. Add 3 tbsp of oil. Add ginger, garlic and onion. Stir on low flame . Add chicken, sausages and salami. Stir well. Now add the herbs, green chillies, green peas and salt. Turn off the heat.

In a bowl beat eggs using a hand mixer. Add oil and milk. Stir in the dry ingredients and wet ingredients together. Add the prepared chicken / salami . Gently stir using a spatula. Add 1-2 tbsp of water if the batter is too thick.

Cover the bowl with a cling film. Let it rest of 10 minutes.

Meanwhile, Pre heat the oven at 140 degrees C.

Grease and dust a loaf tin.

Transfer the prepared batter into a loaf tin. Place tomato slices / capsicum slices on top if you desire.

Bake for 25-30 minutes at 140 degrees C .
