Mixed berry tea cake flavoured with orange zest and orange juice..
This moist and soft tea cake has a lovely crumb and texture . Cream cheese and orange zest further enhances the flavour of the cake...
Ingredients
- 115 g All purpose flour
- 1/2 tsp Baking powder
- 1oo g Powdered sugar
- 90 g Butter
- 25 g Cream cheese
- 2 count Egg
- 1 tsp Orange zest
- 2 tsp Orange juice
- 1/4 cup Water
- 1/4 cup Mixed berry chopped
- 1/4 tsp Salt
Directions
Grease and dust a 6" round cake tin . Chop the berries and keep it aside . Separate the egg whites and yolks . Pre heat the oven at 160 degree C with both and bottom rods on .
Beat the egg whites until stiff and keep it aside . Beat the egg yolks lightly . Sift the dry ingredients thrice .
Cream butter and orange zest well . Add powdered sugar. Beat well . Add cream cheese .Continue beating in low speed . Add lightly beaten egg yolks .
Using a spatula , gently fold in flour ,orange juice and water ,starting and ending with flour . Do not over mix or stir .
Now fold in egg whites and chopped berries . Transfer it to the prepared cake tin and bake at 160 degree C for 35 minutes or until done .
