Mildly Spicy Raisin Cake

Ingredients

  • 125 g All purpose flour/ Maida
  • 1/2 tsp Baking powder
  • 1/8 tsp Baking soda
  • 1/2 tsp Ginger powder
  • 1/2 tsp Cinnamon powder
  • 1/2 tsp Nutmeg powder
  • 1/4 tsp Cardamom powder
  • 110 g Salted butter
  • 110 g Granulated sugar
  • 1/3 cup Raisins chopped
  • 1/4 cup Orange juice
  • 1 count Egg

Directions

Grease and dust a 6” aluminium pan or keep the cupcake mounds ready. Pre heat the oven at 150 degrees C for 15 minutes.

Sift all the dry ingredients together. Sift it thrice.

Cream butter and sugar well.

Add gently beaten egg.

Continue creaming.

Using a spatula fold in the flour mixture, orange juice and chopped raisins.

This can be baked in a 6” aluminium pan or in cupcake moulds.

Bake for 35- 40 mins if you are using a 6” baking tin. 18- 20 minutes of baking for cupcakes.
