Mango Cranberry Cookies..
Ingredients
- 150 g Maida /All purpose flour
- 75 g Custard powder
- 1/4 tsp Baking powder
- 150 g Salted butter
- 110 g Powdered sugar
- 1/4 cup Mango juice without water
- 1 tsp Sugar
- Yellow food colouring
- 30 g Cranberry
Directions
I am using store bought thick mango juice.
Cook mango juice and sugar for 3-4 minutes or until thick. Turn off the heat. Let it cool.
Finely chop the cranberries.
Sift the flour, baking powder and custard powder.
In a bowl, cream butter and sugar well.
Add a drop of yellow food colouring.
Add the sifted ingredients and chopped cranberries.
Gently using a spatula, bring all the ingredients together.
Cover the dough with cling film and refrigerate for 30 mins.
Line a rectangular tin with parchment sheet.
Take one teaspoon of dough.
You can give any shape or pattern you prefer.
Refrigerate again for 15 mins.
Pre heat the oven at 150 degrees C with top and bottom rods on for 15 mins.
Place the tray on the middle rack .
Bake for 20 mins.
Place the cookies on a wire rack. Let it cool.
