Mango cranberry butter cake
This cake is very soft and moist . I used Alphonso mango which gives a lovely flavor and richness to the cake . Cranberries gives a nice texture to the cake . Lemon juice is added to balance the sweetness .
Ingredients
- 1 cup All purpose flour
- 1 tsp Baking powder
- 1/2 tsp Salt
- 3/4 cup Powdered sugar
- 3/4 cup Butter
- 2 count Egg
- 1 1/2 tbsp Water
- 1/2 tsp Lemon juice
- 1/4 cup Mango puree
- 1/2 tbsp Sugar
- 1/4 cup Cranberry
- 2 tbsp Water to soak cranberry
Directions
Pre heat the oven at 160 degree C . Grease and dust a 7 " round tin . Sift the flour with baking powder and salt thrice . Chop the cranberries and soak in 2 tbsp water for ten minutes . Add 1/2 tbsp of sugar to the mango puree and cook for 2 minutes . Add a drop of yellow colour (optional) . Mix well . Let it cool .
Cream butter and powdered sugar . Add eggs one by one . Gently fold in flour in three addition alternating with water, cranberry, lemon juice and mango puree , starting and ending with flour . Transfer the batter into prepared cake tin . Bake at 160 degree C for 35 minutes or until done .
