Mango Coconut Butter Cake

Ingredients
- 125 g All purpose flour/ Maida
- 1/2 tsp Baking powder
- 125 g Granulated sugar
- 100 g Salted butter
- 1 count Egg
- 1/3 cup Mango pieces
- 3 tbsp Coconut milk
- 4 tbsp Toasted Coconut
- 1 1/2 tsp Lemon juice
Directions

Pre heat the oven at 150 degrees C.

Grease and dust a 6” aluminium tin.

Sift the flour and baking soda thrice.

Keep all the other ingredients ready.

Use thick coconut milk.

Cream butter and sugar well. Add gently beaten egg.

Fold in sifted flour, coconut milk and lemon juice.

Add 2-3 tbsp of water if the batter is too thick.

Now gently fold in the mango pieces and coconut.

A small drop of yellow colour can be added.

Never over beat or stir the batter. Always follow cut and fold method.

Place it in the oven.

Bake for 35-40 minutes at 150 degrees C or until done.
