Malva Pudding

Ingredients

  • 1 1/2 cup All purpose flour/ Maida
  • 1 tsp Baking soda
  • 2 count Egg
  • 3/4 cup Castor sugar
  • 2 1/2 tbsp Butter
  • 2 tbsp Apricot jam
  • 1/2 cup Milk
  • 1 tbsp White vinegar

For the sauce

  • 1 cup Fresh cream
  • 75 g Sugar
  • 90 g Butter
  • 2 tbsp Red wine/ Brandy/Orange juice

Directions

Sift the flour and baking soda thrice. Pre heat the oven at 150 degrees C for 10 mins.

Heat milk and butter on low flame. Turn off the heat.Add vinegar.

Keep it aside.

Beat eggs and sugar well.

Add apricot jam. Continue beating.

Fold in sifted flour.

Add the milk mixture.

Gently fold in using a spatula.

Cover the baking pan with aluminium foil.

Bake at 150 degrees C for 35- 40 mins.

Meanwhile let us prepare the sauce.

In a heavy bottom sauce pan , heat milk, fresh cream and sugar on low heat.

Turn off the heat. Let it cool well. Now add red wine/ brandy/ orange juice. Keep it aside.

After 30 minutes of baking,remove the baking pan from the oven.Remove the aluminium foil.Discard the foil and place it back into the oven. Bake for until the top is golden brown in colour.

Remove from the oven.Pour the prepared sauce on top. Let it soak well.

Serve hot with custard or vanilla ice cream.
