Lemon Cardamom Cake

Ingredients

  • 125 g Cake flour
  • tsp Baking powder
  • 115 g Granulated Sugar
  • 110 g Salted Butter
  • 1 count Egg
  • 2 tsp Lemon zest
  • 1 tsp Cardamom powder
  • 2 tbsp Lightly toasted coconut
  • 1 tsp Lemon juice
  • cup Buttermilk

Pre heat the oven at 150 degrees C.

Grease and dust a 6” aluminium pan.

Sift the dry ingredients thrice.

Cream butter and sugar.

Add lemon zest and cardamom powder .

Add lightly beaten egg.

Gently fold in flour and buttermilk.

Add lemon juice.

Fold in toasted coconut gently.

Transfer the batter to the prepared tin.

Bake at 150 degrees C for 35-40 minutes or until done.
