Lemon Basil Cake

Ingredients
- 125 g Cake flour
- 1/2 tsp Baking powder
- 1/8 tsp Baking soda
- 100 g Salted Butter
- 115 g Granulated Sugar
- 1 tbsp Lemon zest
- 1/2 tbsp Lemon juice
- 4 tbsp Fresh Basil leaves finely chopped
- 1 tbsp Ginger finely chopped
- 6-7 tbsp Water

Pre heat the oven at 150 degrees C. Grease and dust a 6 aluminium pan.

Sift all the dry ingredients thrice.

Cream butter and sugar well.

Add lemon zest, ginger and Basil leaves.Continue creaming.

Add lightly beaten egg.

Fold in the flour mixture. Add water.

Add 2-3 tbsp of extra water if the batter is too thick.

Transfer the batter to the prepared tin.

Bake for 35-45 minutes at 150 degrees C.
