Honey cookies
Ingredients
- 190 g Self raising flour
- 100 g Salted butter
- 90 g Sugar
- 1 tsp Grapefruit zest
- 1/4 cup Grapefruit juice
- 1 1/2 tbsp Honey
For the filling
- 1 tsp Cinnamon powder
- 80 g Almond flakes
- 1/2 tbsp Honey
Directions
In a bowl cream salted butter and sugar.
Cream well until smooth and fluffy.
Add honey.
Add flour, grapefruit zest and juice.
Knead it gently. Add a tbsp of extra flour if required.

Cling wrap and refrigerate the dough for 20 mins.
Meanwhile coarsely grind the almond flakes , cinnamon and 1/2 tbsp of honey.

Take around 1 tsp of cookie dough and shape it into a ball.

Flatten the ball a bit and place 1 tsp of coarsely ground almond in the centre.
Seal it well.

Meanwhile line a rectangular baking tin with parchment sheet.Place the cookie dough and refrigerate it for 10 minutes.
Pre heat the oven at 150 degrees C for 10 minutes and bake for 12-13 minutes.
Transfer the baked cookies to a cooling rack .Let it cool.
Store the cookies in a airtight container.
