Guava Cranberry Fruit Rusk

Ingredients
- 125 g All purpose flour/Maida
- 1/2 tsp Baking powder
- 100 g Salted butter
- 110 g Granulated sugar
- 2 count Eggs
- 2 tbsp Guava purée
- 1/4 cup Cranberries chopped
- 1/2 tbsp Lemon juice

Grease and dust a 6” loaf tin.

Sift the dry ingredients thrice.

Pre heat the oven at 150 degrees C.

Cream butter and sugar well. Add gently beaten eggs.

Sift in flour. Fold in gently. Add 2-3 tbsps of water if the batter is too thick.

Add guava and lemon juice.

Add chopped cranberries.

Transfer the batter into the prepared tin.

Bake at 150 degrees C for 40 minutes.

Take the cake out of the tin.

Let it cool.

Slice into thin pieces.

Line a rectangular tin with parchment sheet.

Transfer the sliced pieces to the prepared tin.

Bake on fan mode at 140 degrees C for 45-50 minutes.
