Cranberry Lemon Tea Cake..

Ingredients

  • 125 g All purpose flour/Maida
  • 110 g Salted butter
  • 115 g Granulated sugar
  • 2 count Egg
  • 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 4 tbsp Water
  • 2 tsp Lemon zest
  • 1 tbsp Lemon juice
  • 1/3 cup Dried cranberries
  • 1/4 cup Water to soak the berries
  • Tonovin essence- 1 drop

Directions

Soak cranberries in 1/4 cup of water for 3-4 hrs.

Grind the cranberries into thick, smooth paste. Keep it aside.

Pre heat the oven at 150 degrees C.

Sift flour, baking powder and baking soda thrice. Grease and dust a 6” aluminium pan or a small loaf tin.

Cream butter, lemon zest and sugar well.

Add gently beaten eggs.

Fold in flour, lemon juice and water.

Fold in the ingredients using a spatula.

Add a drop of tonovin essence .

Add cranberry paste.

Fold in gently.

Transfer it to the prepared tin.

Bake at 150 degrees C for 40 minutes.
