Cornflake Cookies

Ingredients
- 2 cup All purpose flour/Maida
- 3/4 tsp Baking powder
- 1/4 tsp Salt
- 3/4 cup Butter
- 3/4 cup Granulated Sugar
- 1/4 cup Brown sugar
- 1 count Egg
- 1 tsp Vanilla essence
- 3/4 cup Dried apricots
- 1/2 cup Cranberries
- 1 cup Corn flake

Keep all the ingredients ready. Cut the apricots and cranberries into small pieces.

Mix all the dry ingredients together.

Cream butter and sugar well.

Add gently beaten egg.

Mix the flour mixture and creamed ingredients.

Take a tablespoon of dough.

Cover it with cornflake firmly. You can add few pieces of chopped apricot and cranberries(optional).

Line a rectangular tin with parchment sheet.

Refrigerate it for 30 minutes.

Meanwhile pre heat the oven at 150 degree C with both top and bottom rods on.

Bake for 18 minutes.

Transfer it to a wire rack. Let it cool.
