Coconut Paprika Bread
Ingredients
- 2 1/2 cup All purpose flour/Maida
- 3 tbsp Coconut milk powder
- 3/4 tbsp Instant dry yeast
- 3/4 tbsp Sugar
- 2 tsp Salt
- 1/2 cup Thick Coconut milk
- 1/2 cup Water
- 1 count Egg
- 2 tbsp Smoked paprika powder
- 3 tbsp Coriander leaves chopped
- 1 tbsp Refined oil
Directions
In a bowl mix all the ingredients together except egg, oil and liquids.
Mix all the ingredients together for 2-3 minutes.
Now add gently beaten egg , water and coconut milk.
Knead well for 6 minutes.
Add 1 tbsp oil and knead for another 4 minutes until the dough is smooth and elastic.
Shape the dough into a ball and place it in a well oiled bowl. Cover the bowl with cling film.
Let it double in volume.
Now punch the dough gently. Shape it into a loaf . Place it into a well greased loaf tin. Cover the tin with cling film. Let the dough rise until it reaches the rim of the loaf tin.
Meanwhile, Pre heat the oven at 180 degrees C.
Remove the cling film. Apply water or coconut milk on the dough using a silicone brush.
Make a tent with aluminium foil and cover the tin.
Bake for 25 minutes.
Remove the tin from the oven. Remove the aluminium foil.
Apply egg wash on the dough.
Place it back into the oven.
Bake for another 10 minutes or until the crust is golden brown.
Remove the loaf from the tin. Apply butter liberally. Allow the loaf to cool well before slicing.
