Coconut milk key lime ice cream

Ingredients
- 3/4 cup Thick Coconut milk
- 1 tbsp Cornflour
- 2 tbsp Water
- 5 tbsp Sugar
- Fresh cream 1/2 cup+3 tbsp
- 1 tbsp Icing sugar
- 1 tsp Key lime zest
- 2 tsp Key lime juice
Directions

In a bowl, mix cornflour and water without any lumps.

In a saucepan mix thick coconut milk, sugar and cornflour mixture .

Heat it on low flame.Let it thicken. Keep stirring. Turn off the heat.Add key lime zest.

Let it cool well. Cover it with cling film and refrigerate for 1 hour.

Now add the juice.Stir gently.

In another bowl, using a hand mixer,whip the fresh cream until stiff.Add icing sugar .

Add this to the coconut milk mixture.

Beat on slow speed for a minute.

Transfer it to a airtight plastic container .

Cover it with cling film and close the lid tight.

Freeze it for minimum 6-8 hrs.
