Coconut lemon muffins..

Ingredients

  • 2 cup All purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 3/4 cup Castor sugar
  • 1 count Egg
  • 1 cup Milk
  • 3/4 cup Refined oil
  • 2 tsp Lemon juice
  • 2 tsp Lemonzest
  • 3 tbsp Desiccated coconut
  • 3 tbsp Coconut cream

Directions

Sift flour,salt and baking powder thrice.

Keep the muffin pan ready.

Pre heat the oven at 150 degree C .

In a bowl ,mix oil, milk and egg.

Gently fold in the sifted ingredients.

Add coconut cream, lemonzest and lemon juice and desiccated coconut.If the batter is too thick ,add 1 -2 tbsp extra milk.

Spoon in the batter into the muffin tin or cupcake liner.

Bake at 150 degrees C for 18-20 minutes.

For the blueberry glaze

Ingredients.. Icing Sugar -1 cup Blueberries- 1/4 cup. Method.. Purée the blueberries.. Beat the puréed blueberries and icing sugar using a hand mixer or whisk.. Add 1 tbsp of extra sugar if a thicker consistency is preferred..
