Coconut Lemon Cupcakes

Ingredients

  • 125 g Maida /All purpose flour
  • 1/2 tsp Baking powder
  • 110 g Salted butter
  • 115 g Granulated sugar
  • 1 count Egg
  • 3 tbsp Desiccated Coconut
  • 2 tsp Lemon zest
  • 1 tbsp Lemon juice
  • Marachino cherries
  • cup Water

Directions

Preheat the oven at 150 degrees C. Keep the cupcake moulds and liners ready. Sift the flour and baking powder thrice.

Cream butter, lemon zest and sugar well.

Add gently beaten egg.

Fold in the sifted ingredients. Add water and lemon juice. Now fold in desiccated coconut.

Transfer the batter into the prepared cupcake moulds. Place a cherry on top.

Bake for 18-20 minutes.
