Cocktail Pizza

Ingredients

For the dough

  • 2 cups All purpose flour/ Maida
  • 3/4 tsp Instant dry yeast
  • 1 tbsp Sugar
  • 1 tsp Salt
  • 1/2 cup Lukewarm water
  • 1 tbsp Refined oil
  • 1 tsp Italian herbs

For the topping

  • 6-7 count Chicken sausages
  • 8-9 count Mushroom
  • 1/2 cup Onion chopped
  • 1 tbsp Ginger
  • 2 tbsp Garlic
  • 1/2 cup Tomato sauce
  • 1/4 cup Paprika
  • 1/4 cup Red chilli sauce
  • 1/2 cup Chopped spring onion
  • Salt to taste
  • 2 tbsp Oil
  • Italian spices

Directions

For the dough

In a bowl, mix flour, yeast, sugar, salt and Italian herbs well.

Add water.

Knead for 6 minutes until the dough is shiny and elastic. Add 1-2 tbsp of extra water if the dough is too stiff.

Add oil.

Knead for another 3-4 minutes.

Place the dough into a well oiled bowl.

Cover it with cling film.

Let the dough double in volume.

Now punch down the dough gently. Knead for a minute or two.

Cling wrap the dough and refrigerate it for 2-3 hours.

For the topping

Heat a heavy bottom frying pan.

Add oil. Fry ginger, garlic and onion. Add mushrooms. Let it cook for a minute or two.

Add chicken sausages and Italian spices.

Add 2 tbsp of tomato sauce and 1 tbsp of red chilli sauce.

Stir well. Turn off the heat.

Now divide the dough into equal portions. Each portion should weigh around 20gms.

Pre heat the oven at 180 degrees C.

Line a rectangular tin with parchment sheet.

Roll out each portion of dough into small circles . Prick the dough with a fork or create dents.

Transfer it to the prepared tin.

Bake for 5-6 minutes.

Take the dough out.

Spread the tomato sauce evenly on the dough.

Now spread the toppings and red chilli sauce.

Lastly sprinkle cheese, spring onion and paprika on top. Drizzle olive oil on top.

Bake for 8-10 minutes at 180 degrees.
