Chocolate Walnut Bread Pudding
Ingredients
For the chocolate sauce
- 1 cup Dark Cocoa powder
- 1 Sugar
- 1 1/2 cups Water
- 1/2 tsp Salt
For the Bread
- 1 cup All purpose flour
- 1 cup Bread flour
- 3/4 tsp Instant dry yeast
- 1 count Egg
- 1/2 cup Water
- 1 tbsp Sugar
- 1 tsp Salt
- 1 tbsp Oil
- 1/4 cup lightly toasted and coarsely ground walnuts
- 4-5 count Ripe Plums
For the topping
- 2 cups Sliced plums
- 1/2 cup Brown sugar
- 1 tsp Cinnamon powder
- Salt - a pinch
Othe ingredients required
- 3/4 cup Milk
- 1 cup Sugar
Directions
For the chocolate sauce
Mix cocoa powder and sugar well. Add water and salt. Heat on low flame until thick and glossy. Turn off the heat. Let the sauce cool.
For the topping
Slice the plums. Line a baking tin with parchment paper. Transfer the plums to the prepared tin. Sprinkle sugar, cinnamon powder and salt on top. Bake for 20 minutes at 140 degrees C.
For the bread
Keep the stand mixer bowl ready. Mix all the ingredients together except water and egg.
Mix all the ingredients on low speed. Add gently beaten egg and water.
Knead on medium speed for 10 -12 minutes. Now add oil. Knead for another 5-6 minutes.
Shape the dough into a ball. Cover it with cling film. Let in double in volume.
Punch down the dough gently. Knead for 2-3 minutes.
Grease and dust a loaf tin. Shape the dough into a loaf. Place the dough into a loaf tin for second proofing.
Meanwhile pre heat the oven at 180 degrees C.
Bake for 30 minutes . Take the tin out of the oven.
Remove the loaf from the tin. Apply butter liberally.
Let the bread cool well.
Now slice the bread.
Take 6-7 slices. Slice it into cubes.
Toast the bread cubes on low heat until crisp.
Take a 9” pan.
Arrange the toasted cubes evenly. Pour 3/4 cup milk over the bread pieces.
Add 1 cup sugar. Pour the prepared chocolate sauce.
Pre heat the oven at 140 degrees C. Bake for 30-35 minutes until firm.
Take the tin out of the oven. Spread the prepared plums on top.
Place the tin in the oven. Bake for another 15 minutes @140 degrees C.
Turn off the heat.
This delicious pudding can be served warm with vanilla ice cream.
