Chocolate Pistachio sponge cake

Ingredients

  • 1 1/2 cups All purpose flour/Maida
  • 1/4 cup Cocoa powder
  • 1 1/4 cup Sugar
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1/4 cup Pistachio (roasted and powdered)
  • 1 tbsp Thick curd
  • 1 tbsp Orange zest
  • 3 tbsp Orange juice
  • 1/2 cup Refined oil
  • 1 count Egg
  • Luke warm water-1/2 cup+ 2 tbsp

Directions

Pre heat the oven at 150 degrees C. Grease and dust a 8” aluminium tin. Keep it aside.

Sift flour, baking soda, salt and cocoa powder thrice. Add sugar, powdered pistachio and orange zest. Keep it aside.

In a bowl beat oil, egg, curd and orange juice well.

Using a spatula, gently fold in the flour mixture and luke warm water.

Do not stir the batter. Follow cut and fold method.

Transfer the batter into the prepared tin.

Bake for 35 minutes at 150 degreeC or until done.
