Chicken Soup with Rice Noodles and Shitake Mushrooms

Ingredients

  • 3/4 cup Boneless chicken cut into small pieces
  • 2 count Dried Shitake mushrooms
  • 2 cups Chicken stock
  • Rice noodles - handful
  • 3 cup Green chillies chopped
  • 2 tbsp Garlic chopped
  • 2 tbsp Ginger chopped
  • 4 tbsp Onion chopped
  • 1 tsp Rice vinegar
  • 1 tbsp Freshly ground black pepper
  • 1 tbsp Coriander leaves
  • Sugar a pinch
  • Salt to taste
  • 1 tbsp Oil

Soak the mushrooms in 1 1/2cup water for 30 minutes.

Keep all the other ingredients ready.

Drain and chop the mushrooms into small pieces.

In a heavy bottom saucepan, add 1 tbsp of oil. Add mushrooms. Sauté for a minute. Add chicken. Sauté on medium flame for a minute. Add the rest of the ingredients except coriander leaves.Cover the sauce pan.

Let it simmer on low flame for 10-12 minutes. Remove the lid. Add coriander leaves.

Serve hot.
