Cherry Lemon Cake

Ingredients
- 125 g All purpose flour/Maida
- 1/2 tsp Baking powder
- 110 g Salted butter
- 2 count Egg
- 90 g Sugar
- 2 tbsp Thick curd
- 1/4 cup Water
- 1 tbsp Lemon zest
- 6-7 count Maraschino cherries
Directions

Pre heat the oven at 150 degrees C. Sift the flour and baking powder thrice. Grease and dust a 6” round baking tin or a small loaf tin. Grind the cherries into a smooth paste without adding water.

Cream butter, lemon zest and sugar well.

Beat the eggs gently and add it to the creamed mixture.

Gently fold in flour, curd, water and cherry paste.

Add a drop of pink colour if required.

Do not stir the batter.

Transfer the batter into the prepared tin.

Bake at 150 degrees C for 35-40 minutes or until done.
