Cheesy Pumpkin Muffins..
Ingredients
- 1 1/4 cup All purpose flour/ Maida
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tbsp Sugar
- 1 tsp Salt
- 1 count Egg
- Water - 1/2 cup + 1 tbsp
- 1/4 cup Oil
- 2 tbsp Curd
- 1/4 cup Onion chopped
- 1/4 cup Spinach leaves chopped
- 1/4 cup Carrot chopped
- 1 cup Cheddar cheese
- 1 tbsp Red chillies chopped
- 2 tbsp Oil
- 1 cup Pumpkin slices
- 1/2 tbsp Black pepper powder
- 1/2 tsp Salt
- 1 tbsp Oil
Directions
Pre heat the oven at 200 degrees C. Line a rectangular tin with aluminium foil. Slice the pumpkin into thin pieces. Add 1 tbsp oil, salt and ground pepper.Bake for 40 minutes with top and bottom rods on.
Remove it from the oven and keep it aside.Allow it to cool well.
Grind it smooth without adding water.
Now heat a thick bottom frying pan. Add 2 tbsp of oil. Add chopped onion.Fry well on low flame until it is lightly brown in colour. Add chopped red chillies and carrot . Turn off the heat. Add chopped spinach and salt.
Sift flour, baking powder, baking soda and salt thrice. Pre heat the oven at 150 degree C with top and bottom rods on.

In another bowl, whisk egg well. Add the rest of the ingredients except the flour mixture and water.
Now gently fold in sifted flour mixture. Add water. Do not stir the batter. Fold it very gently.

Bake for 20-25 minutes or until done.
