Cheesy Muffins

Ingredients

  • 1 1/2 cup Self raising flour
  • 1/2 tsp Salt
  • 2 tsp Freshly ground pepper
  • Olive oil/ Refined oil 1/4 cup+1 tbsp
  • 1/4 cup Milk
  • 1 tbsp Thick curd
  • 2 count Egg

For the flavouring

  • 1/4 cup Onion chopped
  • 1/2 cup Carrot chopped
  • 1/2 cup Cooked green peas
  • 1/4 cup Boiled potatoes
  • 2 tbsp Coriander leaves chopped
  • 1 tbsp Garlic chopped
  • 1 tbsp Red chillies chopped
  • Salt
  • 2 tbsp Oil
  • 1/4 cup Cheddar cheese

Directions

Heat a heavy bottom saucepan. Add oil. Add chopped onion, chilli and garlic. Fry on low flame.Add the chopped vegetables. Keep stirring.Add salt.Turn off the heat. Add chopped coriander leaves.Keep it aside.

Sift the flour and salt thrice. Pre heat the oven at 150 degrees with top and bottom rods on.

Beat eggs well.Add oil. Continue beating.

Gently fold in the dry ingredients and wet ingredients together. Add curd and pepper powder. Do not stir the batter.

Add the cooked vegetables.

Gently fold in cheddar cheese.

Grease the muffin pan well. I am using small sized pans.

Bake for 18-20 minutes or until done.
