Butter cake flavoured with cream cheese, orange zest,cherry & cocoa..
Ingredients
- 115 g All purpose flour/ maida
- 110 g Granulated sugar
- tsp Baking powder
- 2 count Egg
- 90 g Salted butter
- 25 g Cream cheese
- 1 tsp Orange zest
- 1 1/2 tsp Cocoa powder
- 6-7 count Canned cherries
- 1 tsp Sugar
- 3 tbsp Water
Directions
Grease and dust 6"round cake tin or 8"x 4" x 2 1/2" (length x breadth x height) rectangle tin. Pre heat the oven at 150 degree C. Sift the flour with baking powder thrice. Keep it aside. Powder the granulated sugar and sift it once.
Cut the cherries into small pieces and cook it with 1 tsp of sugar for 2 minutes. Add a drop of pink colour if needed.Turn off the heat and keep it aside.
In a bowl, cream butter , cream cheese and orange zest well . Add powdered sugar and continue to cream.
Gently beat the eggs and add little by little. Don't worry if this mixture curdles.
Now fold in flour along with 3 tbsp of water,starting and ending with flour.
Divide the batter in to 3 equal portions .Transfer two portions of batter into two separate bowls.
To one bowl , gently fold in cherry. Do not stir the batter.
Add cocoa powder to the second bowl. Gently fold in the cocoa powder and add 1 tbsp of water if the batter is thick.
Third portion is already flavoured with orange zest.
Now transfer the batter into the greased rectangle tin.First gently spoon in the plain batter first. Level it with a spoon. Next the pink layer .Do not shake or stir the batter. Now spoon in cocoa flavoured batter.
Place it in the oven and bake it for 35 -40 mins or until done.
